Tuscan Soup

Ingredients:


1 tablespoon extra-virgin olive oil


1 onion, chopped


2 cloves garlic, minced


2 potatoes, peeled and cubed


2 carrots, peeled and diced


2 stalks celery, diced


4 cups vegetable broth


1 (15-ounce) can diced tomatoes

1 (15-ounce) can white beans, drained and rinsed


1 teaspoon dried oregano


1 teaspoon dried basil
- Salt and black pepper, to taste


1/3 cup freshly grated Parmesan cheese

Tuscan soup is a classic Italian dish that is easy to make and oh-so-tasty!

1. Heat the olive oil in a large pot over medium heat. Add the onion, garlic, potatoes, carrots, and celery and cook until lightly browned, about 8 minutes.

2. Pour in the vegetable broth, diced tomatoes, white beans, oregano, and basil. Bring to a boil, then reduce the heat to a simmer and cook until the vegetables are tender, about 15 minutes.

3. Season with salt and pepper, to taste. Serve with Parmesan cheese. Enjoy!
